FYI, we use Fiesta's Enchilada Seasoning... so GOOD! I use less oil than the package calls for, and that is what the 1/4 cup veggie oil in the recipe is for.

Tuna noodle casserole was always a dish I looked forward to as a kid. These days I make many variations on this classic, but this recipe is one my favorites.

I'm a thirty something momma raised in the Pacific Northwest, and am currently living in the Mid-Atlantic area. I grew up eating dishes that I would categorize as classic home cooking... good hearty and healthy food that, for the most part, was mild (NOT bland) and oh so tasty.
When I met my husband, who grew up mostly in the South, he introduced me, and my taste buds, to a whole new world of food. The ingredients, spices, and methods were all foreign to me, but, due to my hubby's phenomenal cooking skills, I've learned how to create some of these fantastic flavors.
I started this blog to share our favorite recipes, to experiment with some new ones, and to discuss other recipes that I find on the web. I try to cook as healthfully as I can, and when ever possible I substitute certain ingredients for ones lower in fat, sugar, and sodium(mayo for low-fat mayo, etc). I don't always annotate these changes on my recipes, but you can guarantee that I am switching things out when I can.
